Adapting this for a sommelier application

Paragraph one: the venue, the role and your availability

Say which venue and which role, then the service style and volume you are used to, then your availability. Managers hire for the shifts they cannot cover, so availability stated early works in your favour more than it does in any other field.

Paragraph two: volume, and one thing you fixed

Name the covers, rooms or transactions you are used to, then one problem you solved — a section you ran alone, a shift you covered, a cost you cut, a new starter you trained. That is what tells a manager you will be useful in week one.

Paragraph three: why this employer

This is where most letters fail. "I admire your commitment to excellence" could be sent to anyone. Name something real — a product, a recent announcement, how the team works, the venue itself, its menu or its clientele — and connect it to your own experience. If you genuinely cannot find anything specific to say, that is worth noticing before you apply.

What this field is judging behind the words

Wine hiring is unusually testable and usually is tested: a blind tasting, a pairing exercise against the current menu, or a service assessment covering decanting and pouring. Beverage directors also ask commercial questions - beverage cost, how you would reprice a list against rising replacement costs, what you would cut. Certification level is used as a first filter, and the trial decides between shortlisted candidates.

Mistakes that cost sommelier candidates

  • Leading with tasting vocabulary instead of the commercial numbers a beverage director needs
  • Stating "certified" without naming the awarding body and level, which are not interchangeable
  • Omitting buying and inventory work, which is what separates a sommelier from a wine-trained server

Those are resume mistakes, but they apply to the letter for the same reason: both documents are read by someone deciding quickly whether you understand the job.

What this role needs on paper

Sommelier certification ladders run through the Court of Master Sommeliers and the Wine and Spirit Education Trust, and both are genuine, examined qualifications - name the body and the level precisely. Alcohol service certification is required in many states before serving, set at state level, and a food handler card applies in many jurisdictions.
